Bean and Cheese Burrito Casserole
Where have you bean all my life? This bean and cheese burrito casserole is fantastic!
Layers of BreadMasters whole wheat stone lavash, beans, salsa and cheese stacked up and baked until bubbly…what a dish!

Bean & Cheese Burrito Casserole
Ingredients
Salsa
- 15 oz can diced tomatoes
- 4 oz can diced green chiles
- 1/2 onion roughly chopped
- 3 garlic cloves
- 2 jalapenos roughly chopped
- 1/3 cup cilantro
- 2 TB lemon juice
- 2 ts cumin
- 1 ts salt

- Cooking spray
- 5 pieces BreadMasters whole wheat stone lavash
- 1 1/2 – 2 cups refried beans
- 2 – 2 1/2 cups shredded cheese
- Onion and cilantro mix
Instructions
Salsa

Place all salsa ingredients in food processor and whirl until desired consistency, set aside

Preheat oven to 375*F

Spray 9×13 casserole dish with cooking spray

Place a piece of lavash in casserole dish

Spread on about 1/3 cup of beans

Pour on about 1/4 cup salsa

Sprinkle on about 1/2 cup cheese

Repeat for all 5 layers

Cover with foil and bake 20 minutes, until heated through

Uncover and bake 10 minutes, until cheese is bubbly
