White Chocolate Pumpkin Cookies
I’m out of my gourd over these white chocolate pumpkin cookies!
Chewy pumpkin cookies with crispy edges filled with white chocolate chips and spiked with pumpkin spice!

White Chocolate Pumpkin Cookies
Ingredients
- 1/2 cup butter softened
- 1/4 cup pumpkin purée
- 1 large egg yolk
- 1 teaspoon vanilla
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1 1/2 cups flour
- 1 1/2 teaspoons pumpkin spice
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup white chocolate chips
Instructions

Preheat oven to 350º F and line sheet pans with parchment paper

Combine butter, pumpkin puree, egg yolk and vanilla and mix until smoothAdd brown sugar and granulated sugar and mix until creamy

Stir in flour, pumpkin spice, baking soda and salt and mix until combined

Stir in white chocolate chips

Drop rounded tablespoons of dough onto prepared baking sheets

Bake for about 15 minutes, until puffed and golden

Cool cookies on pan
