Mmmmm, chicken parmesan or chicken parmigiana or just chicken parm…whatever you decide to call it, it’s delicious!

I love chicken parmesan!

First, it’s chicken and I love chicken. Not only is it chicken (which, did I mention I love?) but it’s made with my favorite part of the chicken and it’s breaded then cooked up to a crispy, crunchy coating.

Second, parmesan…just parmesan. It makes almost everything better!

Finally, tomato sauce…and not just tomato sauce. Marinara sauce. Garlicky, herb-scented, rich marinara sauce. Yum.

Chicken Parmesan
Servings: 4 servings

Ingredients
  • 4 chicken breast cutlets
  • salt
  • pepper
  • 1/2 cup parmesan cheese finely grated
  • 1 cup panko breadcrumbs or any breadcrumbs you prefer
  • 1/2 cup flour
  • 2 eggs beaten
  • olive oil
  • 1 cup marinara sauce
  • 4 oz mozzarella cheese
  • parmesan cheese for topping
Instructions
  1. Preheat oven to 350 degrees F
  2. Season each chicken cutlet with salt and pepper
  3. Add 1/2 cup of parmesan cheese to the breadcrumbs and mix to combine
  4. Dredge each cutlet through the flour then the eggs and then the breadcrumbs, being sure to press the breadcrumbs onto the chicken
  5. Heat the olive oil
  6. Fry each chicken cutlet about 2 - 3 minutes per side until golden brown and place in a casserole dish
  7. Cover each piece of chicken with about 1/4 cup of marinara sauce (or as much as you like)
  8. Top each with Mozzarella and sprinkle with more parmesan

  9. Bake, uncovered, for 30 - 40 minutes until chicken is cooked through

  10. Enjoy!
