- 1 TB olive oil
- 6 large spot prawns
- 2 TB spicy salsa verde
- 1 cup chopped lettuce
- 1/2 cup cooked black rice
- 1/2 cup chopped tomato
- 1/2 avocado sliced
- 1 radish sliced
- Cilantro onion relish

Heat oil in skillet over med-high heat

Add prawns and salsa verde

Cool about 1 minute per side

Fill a bowl with lettuce

Top with rice, tomato, avocado, radish, relish and prawns

Drizzle any remaining cooking sauce from pan over salad
