Kale and Cashew Pesto Recipe | Gimme A Minute Ep. 34
- 3 cups kale packed
- 3 cloves garlic
- 1/2 cashews
- 1/2 teaspoon salt
- juice from 1 lemon about 2 - 3 tablespoons
- 1/2 cup olive oil
Place the kale, garlic, cashews, salt and lemon juice in a food processor
Process until it starts to combine
Add the olive oil in a steady stream until you reach the desired consistency
Enjoy with pasta, on a sandwich or any way you like to pesto!
in your pesto recipe it say 1/2 cashews pretty certain 1/2 cup?
Hi Kathy, yes I use 1/2 cup of cashews when making this pesto. Feel free to adjust the amount of cashews to your taste.
