Italian Pressed Picnic Sandwiches
Artichokes and peppers and giardiniera…oh my! These zesty Italian pressed picnic sandwiches are a real zinger!

- 1/3 cup mayonnaise
- 1/3 cup Giusto Sapore giardiniera chopped
- 1/3 cup Giusto Sapore grilled red & yellow peppers chopped
- 1 clove garlic grated
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- 1 loaf ciabatta bread 12-16 oz
- 4 ounces garlic herbed goat cheese
- 1/4 pound prosciutto thinly sliced
- 1/4 pound salami thinly sliced
- 1 10 oz jar Giusto Sapore quartered artichokes
- 2 handfuls baby arugula
- Giusto Sapore balsamic glaze to drizzle
- Salt and pepper

Mix together mayonnaise, giardiniera, peppers, garlic and lemon juice

Season with salt and pepper to taste, set aside

Slice ciabatta in half lengthwise and scoop out the center of each half, creating a space to fill with ingredients

Spread goat cheese on both sides of the bread

Follow with giardiniera spread

Place prosciutto slices on the bottom half of the bread

Layer with salami, artichokes and pile on arugula

Drizzle with balsamic glaze and season with salt and pepper

Top with the top half of the bread and press down gently to close

Wrap with plastic wrap, tight

Place in refrigerator overnight, pressed with a heavy object (cast iron Pan) to allow flavors to mingle
