Black Bean Vegan Burritos with Cilantro Lime Rice
With all the pantry cooking going on, I thought it would be a great time for some black bean vegan burritos with cilantro lime rice!
That brown rice in my pantry had been patiently awaiting its call to arms…and those canned black beans knew their time would come! With a few pantry essentials, some fresh veggies and herbs and some help from Kaliwonder I was able to wrap up a tasty meal!

- 1 cup brown rice
- 1 3/4 cup vegetable stock or water
- 2 cloves garlic minced
- 1/2 cup cilantro chopped
- Zest from 1 lime
- 2 tablespoons lime juice
- Salt and pepper
- 15 oz can black beans drained
- 2 teaspoons taco seasoning recipe at ChewOnThis on.blog
- 1/4 cup water
- Kaliwonder Slim Wraps
- 1/2 cup Pico De Gallo recipe at ChewOnThis on.blog
- 1 avocado diced
- Hot sauce

Rinse rice under cold water until clear

Add vegetable stock and garlic to rice and bring to a boil

Reduce heat, cover and simmer 40 minutes

Remove from heat, let stand 5 minutes then fluff with fork

Add cilantro, lime zest, lime juice and stir gently

Add salt and pepper to taste

Add the beans, taco seasoning and 1/4 cup water to skillet

Warm over medium medium heat

Warm the wraps on a hot pan

Fill each wrap with rice, beans, Pico de Gallo, avocado and hot sauce

Fold into a burrito
