Tender Turkey Meatballs
Whipped up a quick batch of tender turkey meatballs last night!
Served them up with a sauce I made from a combination of my leftover kale pesto and some tomato sauce. So yummy!
I usually add an egg to help hold them together but these did just fine without an egg. They turned out so tasty…the leftovers were finished off today for lunch!
Try one of these sauces to go with the meatballs…
- 1 lb lean ground turkey
- 1/2 cup Italian style bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup tomato sauce
- 2 tablespoons olive oil

Mix turkey, bread crumbs, cheese and tomato sauce until just combined

Shape mixture into about 14 balls of equal portions

Heat olive oil in skillet over medium high heat

Fry the meatballs until browned on all sides

Add 1/3 cup water, cover and simmer until cooked through

Serve with sauce of your choice
