Paleo Maple Muffins with Carrots, Raisins and Walnuts
Muffins that taste like warm sweet spices and maple syrup…and they’re Paleo? Pass them my way!
That’s right, I had a total success in the kitchen last week and I could hardly wait to share it with you! These Paleo maple muffins are AMAZING!
I ended up making two batches of these in 3 days and they were gone as fast as I could bake them up! No one is tired of them yet either…so I’ll have another batch going shortly!

PALEO MAPLE MUFFINS RECIPE | GIMME A MINUTE EP. 17
- 2 1/2 cups almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 Tablespoon pumpkin pie spice
- 4 eggs
- 2/3 cup coconut oil melted
- 1/2 cup maple syrup
- 1 Tablespoon vanilla
- 1/2 cup shredded carrots
- 1/2 cup raisins
- 1/2 cup walnuts

Preheat oven to 350 degrees F

Line a muffin pan with paper cups

Combine almond flour, coconut flour, baking soda, salt and pumpkin pie spice and set aside

Mix the eggs, coconut oil, maple syrup and vanilla

Fold in the carrots, raisins and walnuts

Scoop about 1/4 cup into each muffin cup

Top with walnuts and raisins

Bake 18 - 20 minutes

Cool 5 minutes in pan
