Paleo Chocolate Chip Pizookie
A huge cookie made from almonds, coconut and dark chocolate…well, that sounds healthy enough to have for breakfast!
Crispy on the outside and soft and chewy in the middle, this paleo skillet cookie is amazing!

- 2 cups almond flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coconut oil
- 1/2 cup coconut sugar
- 2 tablespoons honey
- 2 eggs
- 2 teaspoons vanilla
- 4 oz dark chocolate or about 1 cup or as much as you want
- coarse sea salt for sprinkling

Preheat oven to 350 degrees F

Lightly oil an 8" cast iron skillet or pie plate with coconut oil

Combine almond flour, baking soda, salt, coconut oil, coconut sugar, honey, eggs, and vanilla in a food processor

Whirl it up until combined

Fold in the dark chocolate

Press into the prepared pan/skillet

Top with more chocolate and sprinkle with sea salt

Bake 18 - 20 minutes, until edges begin to brown

Cool 15 minutes in pan
