Lemon Coffee Cake With A Crunchy Crumb Topping

I sometimes like to have a little treat with my morning coffee…and, though he doesn’t drink coffee, the hubby loves anything lemon. This lemon coffee cake is something we both enjoy!
Dusted with powdered sugar, this coffee cake looks beautiful. You can also drizzle it with a quick lemon glaze if you prefer.
If you’ll gimme a minute, I’ll show you how I put it together…
LEMON CRUMB COFFEE CAKE RECIPE | GIMME A MINUTE EP. 2
- 4 Tablespoons butter melted
- 3/4 cup flour
- 1/3 cup sugar
- 1 Tablespoon lemon juice
- Zest of 1 lemon
- 2 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup butter room temperature
- 3/4 cup sugar
- zest of 2 lemons
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 1/2 cup milk
- powdered sugar for dusting

Mix together the butter, flour, sugar, lemon juice and lemon zest

Refrigerate until ready to use

Preheat oven to 325 degrees F

Spray an 8" or 9" springform pan with baking spray

Combine the flour, salt and baking powder in small bowl and set aside

Cream together the butter, sugar and lemon zest in large bowl

Add the egg and mix to combine
-
Mix in the vanilla and lemon juice
-
Add half of the flour mixture and mix
-
Add in the milk
-
Mix in the remaining flour just until combined

Pour the batter into the prepared pan and spread evenly

Top with the refrigerated topping

Bake 50 - 60 minutes, until top begins to brown and toothpick inserted in center comes out clean

Cool in pan 30 minutes

Remove to serving platter and dust with powdered sugar
