Blueberry Fool

I’m no fool…I know a good thing when I see it! This super easy blueberry fool is absolutely a good thing!

I’ve been seeing strawberry and blackberry fools being made all over the place this summer! When I found out it was basically just berries and cream…well of course I had to join in and make this treat!

Berries and cream…simply delicious!

I garnished my blueberry fool with pieces of Ines Rosales crispy cinnamon tortas and really just used those as spoons to get everything into my mouth!

Blueberry Fool

Ingredients
Blueberry Sauce
  • 2 cups blueberries
  • 2 TB lemon juice
  • 1/4 ts ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 ts salt
Whipped Cream
  • 2 cups heavy cream
  • 3 TB powdered sugar
  • 1/2 ts vanilla extract
Garnish
  • Ines Rosales Cinnamon Tortas
Instructions
Blueberry Sauce
  1. Combine blueberries, lemon juice, cinnamon, sugar, and salt in a medium saucepan
  2. Bring to a boil then reduce heat and simmer about 10 minutes until blueberries burst and become soft
  3. Pour into a food processor and purée
  4. Press through a strainer to remove solids
  5. Refrigerate puree until cold and somewhat thickened
Whipped Cream
  1. Whip the heavy cream until soft peaks begin to form
  2. Add powdered sugar and vanilla and whip to combine
  3. Layer the whipped cream and the blueberry sauce into serving dishes, swirling to combine
  4. Serve, garnished with Ines Rosales tortas if desired
