Blackened Halibut Mango Salsa

Dinner went over swimmingly thanks to Catch Sitka and this beautiful, gifted, halibut.

Catch Sitka curates sustainable seafood boxes that deliver direct to your doorstep. All of their seafood is fished via hook-and-line methods, with the  exception of their spot prawns, which are caught during a small sustainable pot fishery in the fall. Their fish is then artisanally processed at their dockside Sitka facility.

Ingredients
Mango salsa-
  • 1-2 mangos diced
  • 1 avocado diced
  • 1 jalapeño minced
  • 1/4 cup chopped tomato
  • 1/4 cup chopped onion
  • 2-3 TB lemon juice
  • Salt and pepper to taste
Halibut-
  • 3 pieces halibut
  • 1-2 TB blackening seasoning
  • 2 TB butter
  • 1 TB olive oil
Instructions
Mango salsa-
  1. Combine ingredients in bowl, set aside
Halibut-
  1. Coat halibut with blackening seasoning
  2. Heat skillet over medium heat
  3. Add butter and oil
  4. Add fish to skillet and cook 3-4 minutes per side, until cooked through
  5. Serve with mango salsa
  6. Enjoy!
