Dinner went over swimmingly thanks to Catch Sitka and this beautiful, gifted, halibut.

Ingredients
Mango salsa-
  • 1-2 mangos diced
  • 1 avocado diced
  • 1 jalapeño minced
  • 1/4 cup chopped tomato
  • 1/4 cup chopped onion
  • 2-3 TB lemon juice
  • Salt and pepper to taste
Halibut-
  • 3 pieces halibut
  • 1-2 TB blackening seasoning
  • 2 TB butter
  • 1 TB olive oil
Instructions
Mango salsa-
  1. Combine ingredients in bowl, set aside
Halibut-
  1. Coat halibut with blackening seasoning
  2. Heat skillet over medium heat
  3. Add butter and oil
  4. Add fish to skillet and cook 3-4 minutes per side, until cooked through
  5. Serve with mango salsa
  6. Enjoy!
