Banana Muffins with a delicious, sweet crumb topping!
- 1/4 cup flour
- 1/4 cup brown sugar
- 2 tablespoons cold butter
- 1 1/2 cup flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 3 medium to large ripe bananas mashed
- 3/4 cup sugar
- 1 egg
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract

Mix together the flour and brown sugar

Add the cold butter and cut in with a fork until crumbly, set aside

Preheat oven to 350 degrees F

Combine the flour, salt, baking soda, baking powder, cinnamon and set aside

Stir together the mashed bananas, sugar, egg, vegetable oil and vanilla

Add the wet ingredients to the dry ingredients and fold together until combined

Scoop batter into paper lined muffin cups

Top batter evenly with topping

Bake about 20 minutes or until toothpick comes out clean

Cool 10 minutes on rack
