Flourless Banana Mini Muffins

…and would you believe they are grain-free and packed with protein? They are!
These simple muffins can be whipped up in a food processor or blender in a matter of minutes and bake up in as little as 9 minutes. They’re quick, perfect little bites of energy!
Gimme a minute and I’ll show you how I make these flourless banana mini muffins! Tasty, grain-free and sweetened with just a touch of honey!

- 1 medium or large banana sliced
- 1/2 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 Tablespoon honey
- 1/4 teaspoon baking soda
- Walnuts and chocolate chips optional

Preheat oven to 400 degrees F

Place mini muffin cup liners in muffin pan

Combine all ingredients in food processor or blender and blend until smooth

Spoon about 2 tablespoons of batter into each muffin cup

Top with your choice of optional ingredients

Bake for 8 to 10 minutes until a toothpick inserted in center comes out clean

Allow to cool

These are great little muffins. I was skeptical about them being tasty at first because of the absence of flour, but OMG they are delicious and the texture is perfect. These definitely made it on my favorite treats list!
