Grab a zucchini and one of those over ripe bananas! Let’s make a delicious loaf of zucchini banana bread!
That’s right! A great way to eat some fruit and veggies…in a tasty quick bread! This sweet bread tastes like a treat and it has an whole zucchini and banana in it, along with some Greek yogurt! I feel pretty great about eating it up…like the entire loaf! I mean, it is a small loaf.

- 1 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla
- 1 cup zucchini shredded (about 1 medium)
- 1/2 cup banana mashed (about 1 small)
Preheat oven to 350 degrees F
Line a small loaf pan (8 x 5) with parchment paper
Mix together the flour, baking powder, baking soda, salt and set aside
Stir together the egg, brown sugar, oil, Greek yogurt and vanilla
Add the dry ingredients and mix just until combined
Stir in the zucchini and banana
Pour the batter into the prepared loaf pan
Bake 50 - 60 minutes, until toothpick inserted in center comes out clean
Cool in pan about 10 minutes
