No Bake Strawberry Cheesecake
This dreamy, creamy no bake strawberry cheesecake was so fluffy it was like eating a strawberry cloud…if those exist, it’s what I imagine it would be like!
So berry good…it really takes the cake!

No Bake Strawberry Cheesecake
Ingredients
Cookie Crust-
- 2 1/2 cups cookie crumbs about 20 vanilla sandwich cookies
- 1/2 cup butter melted
- 1 TB lemon zest
Strawberry Sauce-
- 1 lb strawberries washed and hulled
- 1/2 cup sugar
- 2 TB cornstarch
Dreamy Strawberry Filling-
- 1/4 cup lemon juice
- 1 envelope plain gelatin
- 1 1/2 lbs cream cheese softened
- 3/4 cup sugar
- 1/4 ts salt
- 1 1/4 cups heavy cream
Instructions
Cookie Crust-

Process vanilla sandwich cookies until finely ground

Add butter and lemon zest and process until combined

Press into bottom and up sides of 9″ spring-form pan

Place in the refrigerator to set
Strawberry Sauce-
-
Purée strawberries until smooth
-
Pass purée through a strainer to remove seeds

Cook purée, sugar and cornstarch over medium heat, stirring constantly, until thick

Remove from heat and cool
Dreamy Strawberry Filling-
-
Combine lemon juice and gelatin, stir and allow to sit 5 minutes

Microwave gelatin for 20-30 seconds until dissolved, set aside

Beat the cream cheese, sugar and salt until creamy

Add heavy cream and mix until light and fluffy

Add 1 cup of the strawberry sauce, the gelatin and beat until airy

Pour into the cooled cookie crust and smooth top

Spoon remaining strawberry sauce on top and whirl through with a knife or spatula

Freeze 6 hours or until set

Thaw in fridge

Top with whipped cream and fresh strawberries, if desired
