One Pan Fiesta Chicken and Rice
Your taste buds will have plenty of reason to celebrate this fiesta chicken and rice!
A little spicy and packed with flavor, a great mix of spices really sets this meal up for success. You can use a store bought packet of seasoning…or (and even better) you can mix up a jar of my favorite fiesta spice mix!

Packed with flavor, your taste buds will have plenty of reason to celebrate this Fiesta Chicken and Rice...and it comes together all in ONE PAN!
- 2 tablespoons fiesta spice mix
- 1 tablespoon olive oil
- 1 lime juice
- 5 or 6 chicken thighs bone in and boneless both work great!
- 1 tablespoon olive oil
- 1 cup onion chopped (1 small onion)
- 1 cup bell pepper chopped (1 bell pepper)
- 4 cloves garlic minced
- 1 cup rice long grain
- 1 cup chicken stock
- 1 cup tomatoes chopped
- 1 cup corn
- 1 cup pinto beans
- 2 tablespoons fiesta spice mix

Mix together the fiesta spice mix, olive oil and lime juice

Preheat oven to 350 degrees F

Rub the prepared chicken seasoning all over the chicken thighs

Heat a cast iron skillet or oven safe pan over medium high heat

Add olive oil to skillet
-
Place the chicken into the hot skillet, skin side down, and sear for about 2 minutes until brown

Turn the chicken over and cook another 1 - 2 minutes

Remove the chicken from the skillet and set aside

Add the onions, bell pepper and garlic to the skillet and saute until fragrant

Stir the rice into the onion mixture
-
Add the chicken stock, tomatoes, corn, beans and the fiesta spice mix
-
Stir to combine and bring to a simmer
-
Place the chicken on top of the rice mixture
-
Cover and move to the oven to bake for 25 minutes

Uncover and continue to bake another 20 minutes, or until chicken and rice are done
