Eggs in Purgatory
My first ever attempt at eggs in purgatory…
Yes, that’s right…I hadn’t ever made this dish before. In fact, I had never even tried it before! I have wanted to try it for sometime, but the hubby likes his eggs scrambled and the little guy prefers his hard boiled. Neither of them like their yolks the least bit runny. So, I haven’t had a good reason to make them until now!
…and they were yummy!
FOOD IDIOM A GOOD EGG + EGGS IN PURGATORY | EAT YOUR WORDS EP. 5
- 1 tbsp olive oil
- 1 cup onions chopped
- 2 cloves garlic minced
- 1/4 ts red pepper flakes
- 1/2 ts oregano
- 1 cup tomatoes chopped
- 2 cups tomato sauce
- 4 eggs
- salt
- pepper
- parsley

Heat pan and add the oil

Add onions and cook until soft

Stir in garlic, red pepper, oregano and cook just until fragrant

Add tomatoes and tomato sauce and simmer for 15 - 20 minutes

Make a small indentation in the sauce for each egg and add the eggs

Cover and cook 5 - 7 minutes until the eggs are cooked to your liking

Sprinkle with parsley and serve with toast for dipping
