Easy Shredded Chicken
I’ve heard about how easy it is to shred chicken using a mixer but I hadn’t really considered trying it…until today!
I won an awesome KitchenAid mixer for a recipe submission into the Quaker Creations sweepstakes and thought I’d break the mixer in this weekend! I did…it shredded 4lbs of chicken so fast, I’ll never shred chicken by hand again!
All of this shredded chicken will be seasoned to make a few different meals this week…I’m seeing chicken tacos in my future!
Now I’m moving on to mixing up some baked goods!
- 2 tablespoons oil
- 4 pounds boneless skinless chicken breast
- Salt
- Pepper
- 1 1/2 cups water

Heat oil, in large skillet, over medium heat

Sprinkle chicken breasts with the salt and pepper

Add the chicken breasts to the hot skillet and brown about 4 minutes per side

Add the water and reduce heat to low

Cover the skillet and simmer about 15-20 minutes

Remove from heat and let the chicken rest for 5 minutes

Place the chicken and about 1 cup of the cooking liquid in the bowl of a stand mixer

Turn the mixer on low and mix until the chicken is shredded to your desired texture

Toss the chicken with cooking liquid as needed
