Easy Shredded Chicken

I’ve heard about how easy it is to shred chicken using a mixer but I hadn’t really considered trying it…until today!

I won an awesome KitchenAid mixer for a recipe submission into the Quaker Creations sweepstakes and thought I’d break the mixer in this weekend! I did…it shredded 4lbs of chicken so fast, I’ll never shred chicken by hand again!

All of this shredded chicken will be seasoned to make a few different meals this week…I’m seeing chicken tacos in my future!

Now I’m moving on to mixing up some baked goods!

Shredded Chicken

Ingredients
  • 2 tablespoons oil
  • 4 pounds boneless skinless chicken breast
  • Salt
  • Pepper
  • 1 1/2 cups water
Instructions
  1. Heat oil, in large skillet, over medium heat
  2. Sprinkle chicken breasts with the salt and pepper
  3. Add the chicken breasts to the hot skillet and brown about 4 minutes per side
  4. Add the water and reduce heat to low
  5. Cover the skillet and simmer about 15-20 minutes
  6. Remove from heat and let the chicken rest for 5 minutes
  7. Place the chicken and about 1 cup of the cooking liquid in the bowl of a stand mixer
  8. Turn the mixer on low and mix until the chicken is shredded to your desired texture
  9. Toss the chicken with cooking liquid as needed
  10. Enjoy!
