Sautéed onions, sweet bell peppers, smokey ham and melty cheese…it’s eggcellent!
- 1 TB butter
- 3 eggs
- 2 TB diced onion
- 2 TB diced green bell pepper
- 1/4 cup diced smoked ham
- Salt & pepper
- 1/4 cup shredded cheddar cheese
- Cayenne pepper

Melt butter in skillet over medium heat

Add onion, bell pepper and ham

Season with salt & pepper and cook until onions start to soften

Beat eggs until just combined and add to the pan

Cook until top starts to set then flip omelet over

Add cheese and fold omelet in half

Top with a sprinkle of cayenne pepper
