Asparagus and Ham Quiche

This is something the hubby really likes waking up to! I’ve noticed that I often tell you how much my hubby enjoys what I make…well, I think he’s probably just super simple to please! I’m not sure that he has complained about anything I’ve ever made for him 🙂 I’ll think about that and let you know.

I love this quiche so much, I can eat it for breakfast, lunch and dinner…or brunch, quiche is kind of known for brunch…right?

It’s easy to make, just mix all the ingredients together and bake. Because we eat very little grains in our home, this quiche is crust-less. There’s no need for pie dough, making it grain-free! Of course, if you want it with a crust but want to keep it grain-free…I suggest using the coconut flour crust recipe in my previous post, without the honey of course and you can even add some herbs to make it savory.

Is it still considered a quiche if there is no crust? I’m not entirely sure but that doesn’t make this any less delicious!

You are welcome to lighten this up with milk or even almond milk, whatever best fits your lifestyle. I really love this made with heavy cream and we’re having all that cheese anyway why skimp on the cream?! We do indulge every once in awhile!

Asparagus Ham Quiche

Is it still considered a quiche if there is no crust? I’m not entirely sure but that doesn’t make this any less delicious!

Ingredients
  • 6 eggs
  • 1 cup milk or heavy cream or combination of both
  • 3/4 cup chopped ham
  • 12 asparagus spears
  • 1 cup mozzarella
  • 1/4 cup parmesan
  • pinch of salt and pepper you won't need much salt with the cheese and ham it already has some
Instructions
  1. Trim the woodsy ends from the asparagus and discard
  2. Cut the tops off of the asparagus so that they will fit into the pie dish in a sunburst pattern
  3. Chop the remaining asparagus and set aside
  4. Mix together the eggs and milk
  5. Stir the ham, the chopped asparagus, cheeses, salt and pepper into the egg mixture
  6. Place an oiled pie dish (I use coconut oil) on a baking sheet (we want to catch any overflow)
  7. Pour the mixture into the pie dish and place the asparagus tops in a pattern on top
  8. Bake at 350 for about an hour, until browned, center is set and knife inserted comes out clean
