Sometimes I want a quick and easy one pan meal…and this one fits the bill! With about 30 minutes cook time and very little clean up, it’s a real winner!
…and when I say winner, I mean this actually won the Hinode recipe challenge and free Hinode rice…for a year! I’m so set up with rice!

Quick, easy and delicious, this Chimichurri ground turkey and rice comes together in one pan!
- 1 tablespoon olive oil
- 1 lb ground turkey
- 1 yellow onion chopped
- 1 red bell pepper chopped
- 4 cloves garlic minced
- 1/2 teaspoon salt
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon crushed red pepper flakes
- 1 cup Hinode long grain white rice
- 1 3/4 cups low sodium chicken stock or broth
- 1 cup flat leaf Italian parsley chopped
- 1/2 cup cilantro chopped
- 1 tablespoon fresh lime juice
- Lime wedges for garnish

Heat olive oil over medium high heat in large skillet

Crumble in the ground turkey and cook until browned

Add the onions, bell pepper and garlic to the skillet and cook until fragrant

Mix in the salt, smoked paprika, cumin, oregano and red pepper flakes

Stir in the rice and chicken stock and bring to a boil

Reduce heat, cover and simmer for 15 – 20 minutes

Remove from the heat and let sit, covered, 10 minutes

Add the chopped parsley, cilantro and lime juice and toss to combine

Serve with lime wedges and enjoy!
