Fluffy Greek Yogurt Pancakes
Super fluffy Greek yogurt pancakes, yes please!
My hubby is a sucker for pancakes. He could eat them for breakfast, lunch and dinner…so I often try to change things up a bit to make it feel like a different meal. I was pleasantly surprised with the results when I made my first batch of pancakes with Greek yogurt. The batter was nice and thick. It had to be scooped, not poured. The pancakes really rose to the occasion and cooked up nice and fluffy!
This pancake recipe turns out extra fluffy, mile high pancakes every time. I serve them up simple with butter and syrup for the hubby or top them with whipped cream and fruit for the kids. I like mine with a couple of over-easy eggs on top to make them more savory.
These beauties are topped with bananas and walnuts…
However we decide to eat them, these always go like hot cakes!
Super fluffy Greek yogurt pancakes
- 2 cups flour
- 2 tablespoons baking powder
- 2 tablespoons sugar
- ¼ teaspoon salt
- 1 cup greek yogurt
- 1 cup milk
- 2 eggs
- 1 ts vanilla
- 1 banana sliced
- ¼ cup walnuts toasted

Mix the flour, baking powder, sugar and salt, set aside

Whisk together the greek yogurt, milk, eggs and vanilla until smooth

Add the wet ingredients to the dry and stir just until combined

Pour about 1/4 cup batter onto hot griddle for each pancake and cook until bubbles form on the surface

Flip each pancake and cook until browned and cooked through

Serve the pancakes topped with banana slices and walnuts

These were very good. I made ’em extra large, didn’t want to be skimpy with my protein….. Lol 😉!
Eat ‘em large, eat ‘em small…when you’re done, you ate them all! 😜
