Fiesta Chicken Soup
There’s a fiesta at my place and I hope you’re cumin! I’m celebrating with a big bowl of this fiesta chicken soup!
Chicken, corn and beans simmered in a cumin spiked, tomato based broth…

Fiesta Chicken Soup

Ingredients
- 1 tablespoon olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 1 jalapeño diced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon ground cumin
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1/4 teaspoon cayenne
- 14.5 oz can crushed tomatoes
- 14.5 oz can diced tomatoes
- 4 cups chicken stock
- 2 cups shredded or cubed cooked chicken
- 15 oz can black beans drained
- 15 oz can corn drained
- 1/4 cup cilantro chopped
- 1 lime juiced
- 1 avocado cubed
- Sour cream
Instructions

Heat olive oil in pot over med heat

Add onion, garlic, jalapeño and cook until softened

Stir in spices until fragrant

Add tomatoes and chicken stock, bring to a boil

Add chicken, beans and corn and set to simmer until heated through

Stir in cilantro and lime juice

Serve with avocado and sour cream
