Apple Fritter Bread

This treat gets requested often in our house! It really is delicious and the entire loaf is usually gone before the day ends.

I started making this quick bread a few years ago when the Hubby asked if I would provide snacks for his production sets. It was always a hit…and I haven’t stopped making it for our family.

Apple Fritter Bread

Ingredients
Cinnamon Sugar Topping
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
Apple Filling
  • 2 apples peeled and diced
  • 1 teaspoon cinnamon
Bread
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter room temperature
  • 2/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup milk
Glaze
  • 1/2 cup powdered sugar
  • 1 tablespoon milk more if needed
Instructions
Cinnamon Sugar Topping
  1. Mix together the brown sugar and cinnamon and set aside
Apple Filling
  1. Stir together the diced apples and cinnamon and set aside
Bread
  1. Preheat oven to 350 degrees
  2. Prepare a 9" x 5" loaf pan with parchment paper
  3. Mix together the flour, baking powder and salt and set aside
  4. Cream together the butter and sugar until fluffy
  5. Add the eggs, one at a time, and mix to combine
  6. Mix in the vanilla
  7. Add half of the flour mixture and mix just until combined
  8. Add the milk until incorporated
  9. Mix in the remaining flour
  10. Put half of the batter in the loaf pan and smooth out, evenly
  11. Distribute half of the apples over the batter
  12. Sprinkle half of the cinnamon sugar over the apples

  13. Cover with remaining batter
  14. Top with the rest of the apples

  15. Finish with the remaining cinnamon sugar topping

  16. Bake at 350 degrees for about an hour, until toothpick comes out clean
  17. Let cool in pan for 10 minutes, then remove to rack to cool
Glaze
  1. Mix together the powdered sugar and milk until smooth
  2. Drizzle (or pour) over the apple bread
