Lemon Quick Bread

Quick bread is a great treat and this lemon bread is easy, tasty and hubby approved!

Ingredients

Loaf –

• 3 eggs
• 1 cup sugar
• 3/4 cup sour cream
• 1/2 cup oil
• 1 teaspoon vanilla
• 1 tablespoon lemon zest
• 1/4 cup lemon juice
• 1 1/2 cups flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• .

Glaze –

• 1 cup powdered sugar
• 2 tablespoons lemon juice

Instructions

1. Preheat oven to 350 degrees F
2. Line a loaf pan with parchment paper
3. Stir together the eggs, sugar, sour cream and oil
4. Add the vanilla, lemon zest, lemon juice and stir together
5. Mix in the flour, baking powder and salt, just until combined
6. Pour into prepared loaf pan
7. Bake 55 – 60 minutes
8. Cool completely
9. Mix together the powdered sugar and lemon juice
10. Drizzle over cooled bead
11. Slice and Enjoy!
