Paleo Maple Muffins with Carrots, Raisins and Walnuts

Real maple syrup gives these muffins a tasty breakfast tone and the sweet raisins and crunchy walnuts keep you coming back for more!

Ingredients

  • 2 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 Tablespoon pumpkin pie spice
  • 4 eggs
  • 2/3 cup coconut oil melted
  • 1/2 cup maple syrup
  • 1 Tablespoon vanilla
  • 1/2 cup shredded carrots
  • 1/2 cup raisins
  • 1/2 cup walnuts

Instructions

  1. Preheat oven to 350 degrees F
  2. Line a muffin pan with paper cups
  3. Combine almond flour, coconut flour, baking soda, salt and pumpkin pie spice and set aside
  4. Mix the eggs, coconut oil, maple syrup and vanilla
  5. Fold in the carrots, raisins and walnuts
  6. Scoop about 1/4 cup into each muffin cup
  7. Top with walnuts and raisins
  8. Bake 18 - 20 minutes
  9. Cool 5 minutes in pan
  10. Enjoy!
