Loaded Baked Potato Soup in Homemade Bread Bowls

Ingredients

  • 6 slices bacon cut into small pieces
  • 1 cup chopped onion
  • 3 cloves garlic minced
  • 1/3 cup flour
  • 4 cups chicken broth
  • 2 cups milk
  • 2 1/2 lbs potatoes diced
  • Salt & pepper
  • 2/3 cup sour cream
  • Shredded cheese
  • Chives

Instructions

  1. Cook bacon pieces in a soup pot over medium heat crisp
  2. Remove bacon pieces and set aside, leaving the fat in the pot
  3. Add chopped onion and cook until tender, about 3 min
  4. Add garlic and cook until fragrant
  5. Sprinkle in the flour and cook and stir
  6. Add chicken broth, a little at a time until smooth
  7. Stir in the milk, potatoes and salt and pepper
  8. Simmer about 20 min, until potatoes are tender
  9. Remove from heat and stir in the sour cream and half of the cooked bacon
  10. Serve, topped with cheese, bacon and chives
  11. Enjoy!
