Bean & Cheese Burrito Casserole

Ingredients

Salsa

  • 15 oz can diced tomatoes
  • 4 oz can diced green chiles
  • 1/2 onion roughly chopped
  • 3 garlic cloves
  • 2 jalapenos roughly chopped
  • 1/3 cup cilantro
  • 2 TB lemon juice
  • 2 ts cumin
  • 1 ts salt

  • Cooking spray
  • 5 pieces BreadMasters whole wheat stone lavash
  • 1 1/2 - 2 cups refried beans
  • 2 - 2 1/2 cups shredded cheese
  • Onion and cilantro mix

Instructions

Salsa

  1. Place all salsa ingredients in food processor and whirl until desired consistency, set aside

  1. Preheat oven to 375*F
  2. Spray 9x13 casserole dish with cooking spray
  3. Place a piece of lavash in casserole dish
  4. Spread on about 1/3 cup of beans
  5. Pour on about 1/4 cup salsa
  6. Sprinkle on about 1/2 cup cheese
  7. Repeat for all 5 layers
  8. Cover with foil and bake 20 minutes, until heated through
  9. Uncover and bake 10 minutes, until cheese is bubbly
  10. Enjoy!
