Green Chile Chicken Enchilada Casserole

Ingredients

  • BreadMasters Markook Lavash Flat Bread

Cilantro onion relish -

  • 1 bunch cilantro washed, dried and chopped
  • 1/2 yellow onion diced
  • Juice from half a lime
  • Salt to taste

Fillings -

  • 4 cups salsa verde recipe on my blog
  • 4 cups shredded chicken recipe on my blog
  • 4 cups shredded jack cheese

Toppings -

  • Pico de Gallo recipe on my blog

Salsa verde crema -

  • 1 cup sour cream
  • 1/4 cup salsa verde
  • Juice from half a lime
  • Salt and pepper to taste

Instructions

Cilantro onion relish -

  1. Combine the cilantro, onion, lime juice and salt
  2. Set aside

Assembly -

  1. Spread about 1 cup of salsa verde in bottom of 9x13 casserole dish
  2. Fit a Markook flat bread into the casserole dish perfectly
  3. Layer 2 cups of chicken on the flat bread
  4. Sprinkle over cilantro and onion relish
  5. Add a layer of cheese
  6. Repeat layers
  7. Top with Markook flat bread, salsa verde and remaining cheese
  8. Cover and bake 30 minutes
  9. Uncover and bake 10-15 min more until cheese is bubbly
  10. Serve with salsa verde crema and Pico de Gallo
  11. Enjoy!
