Lemon Coffee Cake With A Crunchy Crumb Topping

Ingredients

Topping

  • 4 Tablespoons butter melted
  • 3/4 cup flour
  • 1/3 cup sugar
  • 1 Tablespoon lemon juice
  • Zest of 1 lemon

Cake

  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup butter room temperature
  • 3/4 cup sugar
  • zest of 2 lemons
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 1/2 cup milk
  • powdered sugar for dusting

Instructions

Topping

  1. Mix together the butter, flour, sugar, lemon juice and lemon zest
  2. Refrigerate until ready to use

Cake

  1. Preheat oven to 325 degrees F
  2. Spray an 8" or 9" springform pan with baking spray
  3. Combine the flour, salt and baking powder in small bowl and set aside
  4. Cream together the butter, sugar and lemon zest in large bowl
  5. Add the egg and mix to combine
  6. Mix in the vanilla and lemon juice
  7. Add half of the flour mixture and mix
  8. Add in the milk
  9. Mix in the remaining flour just until combined
  10. Pour the batter into the prepared pan and spread evenly
  11. Top with the refrigerated topping
  12. Bake 50 - 60 minutes, until top begins to brown and toothpick inserted in center comes out clean
  13. Cool in pan 30 minutes
  14. Remove to serving platter and dust with powdered sugar
  15. Enjoy!
