Eggs In Purgatory

Ingredients

  • 1 tbsp olive oil
  • 1 cup onions chopped
  • 2 cloves garlic minced
  • 1/4 ts red pepper flakes
  • 1/2 ts oregano
  • 1 cup tomatoes chopped
  • 2 cups tomato sauce
  • 4 eggs
  • salt
  • pepper
  • parsley

Instructions

  1. Heat pan and add the oil

  2. Add onions and cook until soft

  3. Stir in garlic, red pepper, oregano and cook just until fragrant

  4. Add tomatoes and tomato sauce and simmer for 15 - 20 minutes

  5. Make a small indentation in the sauce for each egg and add the eggs

  6. Cover and cook 5 - 7 minutes until the eggs are cooked to your liking

  7. Sprinkle with parsley and serve with toast for dipping
