One Pan Chimichurri Ground Turkey and Rice

Quick, easy and delicious, this Chimichurri ground turkey and rice comes together in one pan!

Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 1 yellow onion chopped
  • 1 red bell pepper chopped
  • 4 cloves garlic minced
  • 1/2 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1 cup Hinode long grain white rice
  • 1 3/4 cups low sodium chicken stock or broth
  • 1 cup flat leaf Italian parsley chopped
  • 1/2 cup cilantro chopped
  • 1 tablespoon fresh lime juice
  • Lime wedges for garnish

Instructions

  1. Heat olive oil over medium high heat in large skillet
  2. Crumble in the ground turkey and cook until browned
  3. Add the onions, bell pepper and garlic to the skillet and cook until fragrant
  4. Mix in the salt, smoked paprika, cumin, oregano and red pepper flakes
  5. Stir in the rice and chicken stock and bring to a boil
  6. Reduce heat, cover and simmer for 15 - 20 minutes
  7. Remove from the heat and let sit, covered, 10 minutes
  8. Add the chopped parsley, cilantro and lime juice and toss to combine
  9. Serve with lime wedges and enjoy!
