Cinnamon Roll Coffee Cake

Brown sugar and cinnamon are swirled through the middle and sprinkled on top of this sweet breakfast treat...while Greek yogurt mixes this into a thick dough that bakes up rich and reminiscent of a cinnamon roll!

Ingredients

Topping/Middle

  • 1 cup brown sugar
  • 1 tablespoon cinnamon

Cake

  • 3 cups flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 1/2 cups Greek yogurt
  • 2 teaspoons vanilla
  • 2 eggs
  • 1/2 cup butter melted

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

Topping/Middle

  1. Stir together the brown sugar and cinnamon and set aside

Cake

  1. Preheat oven to 350 degrees F
  2. Line 9 x 13 baking dish with parchment paper
  3. Combine the flour, sugar, salt and baking powder in large bowl
  4. Mix together the Greek yogurt, vanilla, eggs and butter
  5. Add the wet ingredients to the dry and mix until dough forms
  6. Press half of the mixture into bottom of prepared pan
  7. Sprinkle with half of the brown sugar/cinnamon topping
  8. Drop spoonfuls of the remaining dough over the cinnamon mixture and spread out
  9. Sprinkle with remaining cinnamon mixture
  10. Bake 30 - 35 minutes
  11. Cool slightly

Glaze

  1. Mix the powdered sugar and milk until combined
  2. Pour over the cooled coffee cake
  3. Enjoy!
