Coconut Flour Pancakes

A hearty healthy version of pancakes that went over well in our house!

Ingredients

  • 1/4 cup coconut flour
  • 1 TB coconut sugar
  • 1/2 tsp cinnamon
  • pinch of salt
  • 1/4 tsp baking powder
  • 4 eggs
  • 1/4 cup almond milk or milk of your choice
  • 1 tsp vanilla
  • 3 TB coconut oil melted

Instructions

  1. Mix together the first 5 ingredients and set aside
  2. Combine the eggs, milk, vanilla and coconut oil in separate bowl
  3. Add the dry ingredients into the wet and mix well, removing any lumps
  4. Let the batter sit for 10 minutes while the coconut flour absorbs the liquids
  5. Heat your griddle and add a little coconut oil
  6. Pour a little less than 1/4 cup batter onto hot griddle for each pancake
  7. Cook about 1 ½ - 2 minutes per side
  8. Makes about 10 pancakes
