Hinode Black Rice Bowl with Spring Veggies

Ingredients

Cauliflower Sauce -

  • 1 tablespoon olive oil
  • 1 onion chopped
  • 1 head cauliflower chopped
  • 2 cups vegetable broth
  • 1/4 teaspoon turmeric
  • 4 tablespoons nutritional yeast
  • Salt and white pepper taste

Bowl Ingredients -

  • 1 cup Hinode Black Rice cooked per package instructions
  • Spinach
  • Grated carrots
  • Grated beets
  • Pumpkin seeds
  • Sunflower seeds
  • Lime wedge

Instructions

Cauliflower Sauce -

  1. Heat olive oil over medium heat
  2. Add onions and cook until translucent
  3. Stir in cauliflower, vegetable broth, turmeric and nutritional yeast
  4. Bring to a boil, reduce heat, cover and simmer 20 minutes
  5. Purée the cauliflower to smooth texture
  6. Add salt and white pepper to taste

Assembly -

  1. Place 1/2 cup Hinode black rice in a bowl
  2. Add 1/2 cup cauliflower sauce
  3. Pile on a handful of spinach, some grated carrots and beets
  4. Sprinkle with pumpkin seeds and sunflower seeds
  5. Add a wedge of lime
  6. Enjoy!
