St. Patrick’s Day Lime Poke Cake

Ingredients

Cake

  • 2 1/2 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 1/4 cups buttermilk
  • One 3-ounce box lime jello

Topping

  • 2 cups heavy cream
  • 1 tablespoon sugar
  • 2 teaspoons vanilla extract
  • Green cake decorations

Instructions

Cake

  1. Preheat oven to 350 degrees F
  2. Spray the bottom and sides of a 9x13 inch pan
  3. Whisk together the flour, baking powder, baking soda and salt, set aside
  4. Cream together the butter and sugar until light and fluffy
  5. Add the eggs, one at a time, and the vanilla and beat until incorporated
  6. Add the flour mixture and buttermilk in small alternating batches and mix until combined
  7. Spread the batter in the prepared pan
  8. Bake until golden brown and a toothpick comes out clean when inserted in the center, 35-45 minutes
  9. Cool
  10. Poke holes about an inch apart all the way around the cake
  11. Add 1 cup boiling water to the lime gelatin and stir until completely dissolved
  12. Stir in 1/2 cup cold water
  13. Pour the lime mixture over the cooled cake
  14. Refrigerate for at least 2 hours

Topping

  1. Whip the cream with the granulated sugar and vanilla until fluffy
  2. Spread the whipped cream over the cake and sprinkle with green decorations
  3. Enjoy!
