Ingredients

cups
chopped carrots
about 4 or 5 carrots
3
cups
chopped celery
about 4 or 5 stalks

onions
chopped
3
garlic cloves
2
bay leaves
1
teaspoon
peppercorns
1
Tablespoon
tomato paste
1
small bunch of fresh parsley
8 - 10

of water
Instructions
Place all of the vegetables, spices, herbs and tomato paste in a large pot
Cover with water
Bring to a boil
Turn down heat and simmer, uncovered for 1 1/2 to 2 hours
Allow the stock to cool
Strain out the solids
Refrigerate until ready to use, or portion and freeze
