Easy Vegetable Stock

Ingredients

  • 3 cups chopped carrots about 4 or 5 carrots
  • 3 cups chopped celery about 4 or 5 stalks
  • 2 onions chopped
  • 3 garlic cloves
  • 2 bay leaves
  • 1 teaspoon peppercorns
  • 1 Tablespoon tomato paste
  • 1 small bunch of fresh parsley
  • 8 - 10 cups of water

Instructions

  1. Place all of the vegetables, spices, herbs and tomato paste in a large pot
  2. Cover with water
  3. Bring to a boil
  4. Turn down heat and simmer, uncovered for 1 1/2 to 2 hours
  5. Allow the stock to cool
  6. Strain out the solids
  7. Refrigerate until ready to use, or portion and freeze
