Tomatillo Salsa Verde

Ingredients

  • 1 1/2 lbs tomatillos
  • 1 onion
  • 3 cloves garlic
  • 2 jalapenos
  • 1 tablespoon olive oil
  • 1/2 cup cilantro
  • 1/2 teaspoon salt
  • 1 teaspoon cumin
  • 1 tablespoon lime juice

Instructions

  1. Remove the husk from the tomatillos and wash them

  2. Cut the onion in quarters

  3. Place the tomatillos, onions, garlic and jalapenos in a baking dish and toss with a tablespoon of olive oil

  4. Set the tomatillos, onions, garlic and jalapenos under the broiler for about 10 minutes or until they get nice and brown

  5. Put the roasted vegetables into a food processor along with the cilantro, salt, cumin and lime juice

  6. Process until smooth
