Healthy Almond Joy Energy Bites

Almonds, dates, coconut and dark chocolate come together in this healthy snack that tastes so indulgent it's sure to satisfy that candy bar craving!

Ingredients

  • 1 cup almonds
  • 1/2 cup dates soaked in 1/4 cup water for about 15 minutes
  • 1/2 cup shredded coconut
  • 1/2 cup dark chocolate melted

Instructions

  1. Place the almonds, dates (with the soaking water), and coconut in a food processor
  2. Process until the ingredients come together to form a ball
  3. Scoop out about 12 - 13 servings and press together to form a tight ball (or roll together)
  4. Melt the chocolate in the microwave, stirring often
  5. Dip each energy bite into the melted chocolate
  6. Sprinkle with shredded coconut
  7. Enjoy!
