One Pan Fiesta Chicken & Rice

Packed with flavor, your taste buds will have plenty of reason to celebrate this Fiesta Chicken and Rice...and it comes together all in ONE PAN!

Ingredients

Chicken Seasoning -

  • 2 tablespoons fiesta spice mix
  • 1 tablespoon olive oil
  • 1 lime juice

Meal -

  • 5 or 6 chicken thighs bone in and boneless both work great!
  • 1 tablespoon olive oil
  • 1 cup onion chopped (1 small onion)
  • 1 cup bell pepper chopped (1 bell pepper)
  • 4 cloves garlic minced
  • 1 cup rice long grain
  • 1 cup chicken stock
  • 1 cup tomatoes chopped
  • 1 cup corn
  • 1 cup pinto beans
  • 2 tablespoons fiesta spice mix

Instructions

Chicken Seasoning -

  1. Mix together the fiesta spice mix, olive oil and lime juice

Meal -

  1. Preheat oven to 350 degrees F
  2. Rub the prepared chicken seasoning all over the chicken thighs
  3. Heat a cast iron skillet or oven safe pan over medium high heat
  4. Add olive oil to skillet
  5. Place the chicken into the hot skillet, skin side down, and sear for about 2 minutes until brown
  6. Turn the chicken over and cook another 1 - 2 minutes
  7. Remove the chicken from the skillet and set aside
  8. Add the onions, bell pepper and garlic to the skillet and saute until fragrant
  9. Stir the rice into the onion mixture
  10. Add the chicken stock, tomatoes, corn, beans and the fiesta spice mix
  11. Stir to combine and bring to a simmer
  12. Place the chicken on top of the rice mixture
  13. Cover and move to the oven to bake for 25 minutes
  14. Uncover and continue to bake another 20 minutes, or until chicken and rice are done
  15. Enjoy!
