Strawberry Cheesecake

No Bake Strawberry Cheesecake

Ingredients

Cookie Crust-

  • 2 1/2 cups cookie crumbs about 20 vanilla sandwich cookies
  • 1/2 cup butter melted
  • 1 TB lemon zest

Strawberry Sauce-

  • 1 lb strawberries washed and hulled
  • 1/2 cup sugar
  • 2 TB cornstarch

Dreamy Strawberry Filling-

  • 1/4 cup lemon juice
  • 1 envelope plain gelatin
  • 1 1/2 lbs cream cheese softened
  • 3/4 cup sugar
  • 1/4 ts salt
  • 1 1/4 cups heavy cream

Instructions

Cookie Crust-

  1. Process vanilla sandwich cookies until finely ground
  2. Add butter and lemon zest and process until combined
  3. Press into bottom and up sides of 9" spring-form pan
  4. Place in the refrigerator to set

Strawberry Sauce-

  1. Purée strawberries until smooth
  2. Pass purée through a strainer to remove seeds
  3. Cook purée, sugar and cornstarch over medium heat, stirring constantly, until thick
  4. Remove from heat and cool

Dreamy Strawberry Filling-

  1. Combine lemon juice and gelatin, stir and allow to sit 5 minutes
  2. Microwave gelatin for 20-30 seconds until dissolved, set aside
  3. Beat the cream cheese, sugar and salt until creamy
  4. Add heavy cream and mix until light and fluffy
  5. Add 1 cup of the strawberry sauce, the gelatin and beat until airy
  6. Pour into the cooled cookie crust and smooth top
  7. Spoon remaining strawberry sauce on top and whirl through with a knife or spatula
  8. Freeze 6 hours or until set
  9. Thaw in fridge
  10. Top with whipped cream and fresh strawberries, if desired
  11. Enjoy!
